Fruity Granola Bars
Even the cleanest label, healthy granola bars have tons of sugar in them and ingredients you can't pronounce. This is truly a wonderful recipe to make a delicious snack, breakfast or dessert item.

Ingredients:
2 tsp coconut oil, melted
1 cup unsweetened applesauce, room temperature
2/3 cup skim milk
2 tbsp honey
2 tsp ground cinnamon
5 cups old-fashioned oats
2 cups diced fruit (I used 1 c. strawberries, 1 c. rhubarb) (also try with frozen unsweetened blueberries, raspberries, or other fruits)
Directions
Instructions:
Pre-heat oven to 350 degrees F.
Whisk coconut oil, applesauce, milk, honey and cinnamon until combined.
Add 5 cups oats and stir to coat oats with wet mixture.
Fold in fruit and mix well.
Press into a 13 x 9 glass pan.
Bake for 17-20 minutes (depending on your oven) until the bars are firm and lightly golden brown.
Let cool and cut into bars.
Store at room temperature for a few days or refrigerate/freeze for longer-term storage.
