Easy Baked Cod



Cod promotes cardiovascular health and is a source of blood-thinning omega-3 fatty acids as well as an excellent source of vitamin B12 and a good source of vitamin B6, both of which are needed to keep homocysteine levels low.


Ingredients

1 lb cod (fresh caught, never farmed)

Oil or ghee

Seasonings of choice

Pinch of salt


Directions

  1. In a glass 13x9 pan, add 1" of water

  2. Over the water, line the pan and sides with foil (so the water is under the foil)

  3. Wash and dry and place the fish on top of the foil

  4. Add ghee or drizzle oil over fish

  5. Season to taste

  6. Cover with foil

  7. Bake at 350 for 20-30 minutes (bake time will depend on the thickness of the fish -- fish should flake apart when a fork is inserted and lightly twisted)
